After finishing my studies in Business Strategy and Planning I set my journey into the field of operations. My previous job was managing a recruitment firm.
I started with the Japan Centre group in the kitchen as a Kitchen Assistant in 2018 out of interest to learn insights into Japanese cuisine.
I am honoured to have worked under the leadership of Tokunaga San our Sushi Ambassador. I carefully picked up lots of tips from Kanji San our Executive Chef when he came in to develop new products in the kitchen I was working at.
After that, I turned my focus back to the operational side and currently manage a fantastic team of 24 colleagues at our Stratford site. Which is faceted with retail and restaurant, serving ramen, souzai, sushi and sashimi in a traditional Japanese style.
