Job Description

Role: Assistant Restaurant Manager

Location: Shoryu Covent Garden, WC2B

Contract: Full time - 40 hours a week; Permanent

Salary: £22,000 - £25,000 per annum; depending on experience

Reporting to:Restaurant Manager and Area Manager

Company Profile:

Japan Centre began life in 1976 with a suitcase full of Japanese books and an idea to cater for the community of Japanese people living in London. Japan Centre has since grown to become one of the largest and most influential Japanese retailers in London and Europe, with its new flagship store on Panton Street, and stores in Westfield Stratford City and Shaftesbury Avenue.

Japan Centre now includes, Shoryu Ramen, a popular chain of ramen restaurants with 12 branches in London, Manchester, Oxford and Japan, and Sakagura, a sake and steak dining experience in Heddon Street, Mayfair.

In July, Japan Centre Group alongside Cool Japan Fund opened Ichiba, Europe’s largest Japanese food hall in Westfield London. Featuring, a dedicated Japanese bakery and cafe, foodhall, and hot food stations and bar.

Key Responsibilities:


  • Provide training to new starters
  • Motivate and support the staff in achieving sales targets.
  • Trial shift feedback to HR Department.
  • Organising and producing monthly rota and daily plan
  • Managing labour cost efficiently according to management instructions
  • Stock availability and Inventory check
  • Delivery check (in case requested)
  • Providing support to the counter assistants in preparing food box for customers
  • Any other reasonable duties requested by Line Managers

Skills Requested:

Essential Requirement


  • Previous experience in a similar role in a fast space environment
  • Passionate about delivering excellent customer service
  • Relevant experience in a retail and food environment
  • Excellent people management skills, with a proven ability to work collaboratively in a team
  • Ability to drive the business forward whilst maintaining focus on standards and overall results.
  • Have a Fresh Thinking and a continuous improvement mindset.
  • Be a strong influencer, able to communicate at all levels with excellent customer service skills.
  • Strive to minimise costs, reduce waste and safeguard stock whilst complying with the Company price and promotional changes
  • Knowledge in Food Hygiene and Health & Safety and ensuring the compliance of safety standards.
  • Knowledge of Japanese products, culture and language would be advantageous
