Junior Sous Chef

Location: Ichiba

Pay rate: £25,000 (after probation £26,500)

Working hours: 45 hours a week 

Job Purpose: As Junior Sous Chef you will stand second in the Ichiba kitchen hierarchy after the Kitchen Manager and Sous Chef, which will give you full control over the kitchen and direct responsibility for the food quality produced.

Essential Duties and Responsibilities:

  • Working with management team to produce ‘cutting edge’ menus in accordance with the restaurant’s policy and vision
  • Come up with new dishes which appeal to the clients, whenever required
  • Undertaking operational management of food production, producing high quality dishes
  • Overseeing the preparation and presentation of the menu to meet the agreed standards
  • Make sure the hygiene and food safety standards are met in all stages of food preparation, starting with the ingredients and ending with the finished dish which leaves the kitchen door
  • Make sure that the professional equipment is in good conditions and signal any malfunction before it affects the staff or the clients
  • You will support and guide the kitchen team to achieve the highest attainable standards in terms of quality and variety of food, with fresh and winning seasonal menus
  • Assisting with the implementation of the relevant strategy for the overall success of the food production across the department, in agreement with Kitchen manager and Sous Chef.
  • Being fully conversant with the Restaurant operations and to efficiently manage the operation of all shifts
  • To ensure that safety of the working environment in the department is maintained
  • Helping in any area of the store when circumstances dictate
  • Maintain Monthly Expenses Budget: keeping record of all expenses on a monthly basis; planning ahead on any projects and/or tasks .
  • Payroll controls, to hit plan 
  • Food cost controls to be within agreed budgets including stock loss and shrink. 
  • Manage food waste to prescribed and agreed limits
  • Control costs on other expenses such as uniform, stationery and travel.

A two hour trial shift is required before employment is considered.
