Full Time Sushi/ Sashimi Chef/ Hot food preparation Assistant

We are looking for an experienced Chef to join our Ichiba team!

Location: London - White City 


Full-time 40-45 hours a week.

This role involves working early mornings, late nights and weekends.

Shifts are scheduled on a rota basis between 6:30am - 9:00pm

We are looking for an experienced and enthusiastic Sushi/ Sashimi chef/ Hot food Preparation Assistant who can work competently in a fast paced environment and deliver amazing service to all our customers. You must have a minimum of 1 year experience in a similar role. All candidates must be entitled to live and work in the UK.

Job purpose: You will be focused on preparing authentic Japanese sushi and sashimi, with a focus on fresh seasonal ingredients. As a Sushi/ sashimi chef/ preparation assistant, you will demonstrate exceptional knowledge in sashimi/ sushi preparation and have excellent knife skills. You will be delivering high standard sashimi/ sushi products for our customers and you are expected to practice proper food handling procedure and cleanliness at all times.

Role and Responsibilities:

  • Have a good knowledge of sashimi/ sushi products, and deliver these daily with the kitchen team.
  • Sashimi/ sushi creation, be able to innovate in the kitchen, in a way which will challenge and excite the customer and enhance our brand image.
  • Display creativity by finding new ways to garnish food presentations, giving our site a distinctive edge.
  • Create and have the ability of meat cutting and hot food cooking. Overseeing and completing daily preparation work in the department, filleting fish, and preparing sashimi/ sushi to fill sashimi/ sushi cases and customer orders.
  • Take regular inventory of his site food supply, including fish, rice and other ingredients.
  • Ensure that there are adequate amounts of ingredients for our service and preparation.A complete understanding of kitchen operations; demonstrated organisational skills, and managing waste.
  • Be able to cope with a constant demand driven pressure; along with continuous interaction with customers and co-workers in a fast paced environment.
  • Responsible for production, ordering and receiving, merchandising, controlling inventory, hygiene standards and safety within departments operation. Ensuring compliance with health and safety and food safety procedures; and in maintaining a high degree of cleanliness throughout the preparation area.
  • This role requires you to stand for your whole shift (excluding breaks)
  • Lifting, bending, carrying and stretching on a regular basis


Essential skills:

  • Sashimi/ sushi preparation and presentation.
  • Have proven kitchen experience in the fast paced environment.
  • Ability to work under pressure in a busy environment.
  • Passion for working in the kitchen and delivering excellent food quality.
  • Attention to detail. 
  • Excellent communication with colleagues of all levels.
  • Great customer service skills.
  • An understanding of Food Safety standards.
  • Ability to multitask with a "hands on" approach to work.

Desirable/ beneficial skills:

  • Experience within a Japanese restaurant/ production is an advantage.
  • Knowledge of Japanese food and culture


A two hour trial shift will be required before employment is considered.
